Attitude~ Is a little thing that makes a BIG difference

Pork Chop Casserole from Mr. Food

Here it is, the ultimate weeknight dinner solution! Super-easy Pork ChopCasserole goes together in minutes and fills the house with an aroma that will bring your gang running to the table.
Serves: 6
Ingredients
  • 1/2 cup all-purpose flour
  • thick pork chops, rinsed and left damp
  • 3 tablespoons vegetable oil
  • 3/4 cups beef broth
  • (10-3/4-ounce) can condensed golden mushroom soup
  • (6-ounce) package long-grain and wild rice mix
  • 1 cup water
Instructions
  1. Preheat oven to 350 degrees F.
     
  2. Place flour in a shallow dish; add pork chops and turn to coat completely with flour.
     
  3. In a large skillet, heat oil over medium heat. Brown pork chops in batches for 5 to 6 minutes per side.
     
  4. Meanwhile, combine remaining ingredients in a 9- x 13-inch baking dish; mix well. Place browned pork chops over rice mixture. Covercasserole dish with aluminum foil and bake 1 hour, or until no pink remains in pork.

MY HERO~

Today is Fathers Day.. Daddy if you ever get a chance to read this post I want you to know how much you mean to me.. You have always been there when I needed you, not ever far from me.. I can still remember we had that game when you thought I could not breathe and you would say "Can you breathe and I would say no. You would breathe into my nose and say now then I would say YES as if you brought me back to life." Daddy those are the memories I shall always cherish in my heart.. Happy Fathers Day Dad you are the greatest Dad in this world.. I honor you. I respect you. Most of all I love you.. Always and forever your little girl... Olga

FRESH STRAWBERRY TARTS


Delicious Summer treat. Recipe from HoosierHomemade.com. Adapted from Pillsbury
Ingredients
  • 1 box refrigerated pie crusts {or make your own}
  • Sugar for sprinkling on crust
  • Filling
  • 2 1/2 cups fresh strawberries, sliced thin
  • 1/2 cup strawberry glaze
  • Hot Fudge Ice Cream Topping, optional
  • Whipping Cream or Frozen Whipped Topping, thawed
Instructions
    Tarts
  1. Remove pie crust from packaging and let softened according to directions on box
  2. Roll out and sprinkle with sugar
  3. Using a 4 inch round cookie cutter, cut pie crust
  4. Preheat oven to 400 degrees, and spray the bottom of a muffin pan {you will use every other cup} with non-stick cooking spray
  5. Fit rounds, sugared side up, alternating over the cups. Pinch together sides around each cup and prick generously with a fork.
  6. Bake 5-7 minutes or until golden brown. Cool 5 minutes, remove from muffin pan and cool completely.
  7. Filling
  8. Slice strawberries and fold in glaze. Refrigerate for about 30 minutes.
  9. Just before serving, add 1 tablespoon hot fudge topping {if desired}, spoon in strawberries.
  10. Top with whipped topping or whipping cream
Notes
Liz says...If you don't have a cookie cutter 4 inches, use a cup or glass, that's what I did.
